Healthy eating gets easier when you have the right stuff on hand. But that plan begins with first finding out, then knowing, what the right stuff for you looks like.
So, you become an experimenter. Try new things; see what you love and what gets tossed. There is tons of choice of what makes up healthy eating. The hardest part is wading through that choice. But put on your scientist, food critic, chef hat, and have fun with it! That comes down to a positive mindset, like so much else. Look at it as an interesting experiment, not a drag.
I definitely love great food. I refuse to eat dry, cardboard-like, tasteless, “healthy” stuff. I only trade for health plus flavor. And, really, that’s how it works. A switch here and a switch over there, and you begin creating healthy things you love that still taste great.
One of the best items I’ve discovered along the way to eating better is the recipe I’ll share below for a wonderful vinaigrette. I’ve never, ever had someone who didn’t love this one! Even people who claim to hate vinegar-type salad dressings.
Easy to keep on hand ingredients, minutes to make, healthier ingredients that you can pronounce unlike so many store-bought, chemical alternatives. Pure flavor. A little bit goes a long way, and takes a salad from so-so to WOW!

Wellness Reinvented Healthy Vinaigrette
- 1/3 cup of olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon Dijon mustard
- 1 clove garlic, minced
- Salt and pepper to taste
It’s that simple! Whisk together well. Try it as listed above, then try some tweaks to see what suits you. I love garlic so I usually double or triple the cloves. I add a tablespoon or so of apple cider vinegar to lower the fat content and get the health benefits ACV offers. To me, the taste is just as good. By the way, I usually make up double of this batch. It keeps in the refrigerator just fine, and it’s ready so I can put together a salad in no time.
Summer is the perfect time for a big, health-boosting salad, bursting with flavor, color and good taste. Add dark lettuces, a variety of veggies, maybe some lean protein or nuts, a little cheese, etc. Then a slight bit of the dressing above, and you have a perfect lunch or dinner that will taste great and leave you satisfied … and well.
